One thing that makes Nourish settlement worth it may be smithing. To smith stuff/lev smithing you need to afk alot in towns. It´s a great way to make some money on tradeing, with the later skills in smithing you can make alot of cash buy hunting scrubs or buying iron/wood and improve to higher versions etc and sitting in one of your own town and gaining benefits at the same time is not bad.

Also, towns and castles get more villagers selling goods in them than just what villages are attached to them.
